Smoked Ribs

So, we’ve recently purchased a new smoker/grill.

I, of course, cannot wait to try it out. Consequently, ¬†we have eaten nothing that hasn’t been smoked, in the past week.
Tonight, I got a little cocky. Thought I had this new toy all figured out.

It went well. First two hours were a piece of cake. But then, I had to change temps , and this is where it went askew…
Let’s just say, there was a boom, lots of smoke… and the ribs are in the oven to finish up!
